RECIPE

Dried Fruit Chips
By Chef Condra Easley, Patisserie Angelica, Santa Rosa, CA

Fruit chips are a beautiful garnish that will really hit home with that main flavor accent.

Common fruits used for chips :
Apples
Pears
Bananas
Pineapple

Procedure:
For pears and apples slice them lengthwise for a better presentation. Preheat oven to 225° F.

Slice the fruit very thin. If no additional sweetness is desired, skip the next step.

Lay the slices out on a silicone baking mat and sprinkle lightly with confectioner's sugar. Another method is to soak the fruit in a simple syrup for a few minutes. This will give you a more translucent chip.

Bake for 75 - 90 minutes or until crisp. These won't stay crisp for long, so keep them in a tightly sealed container.
